Mediterranean Halloumi Pasta

This vibrant pasta dish brings the sunny flavors of the Mediterranean to your table with salty halloumi and sweet tomatoes.

How to make it

    Get a large pot of salted water boiling for your pasta. Once it is at a rolling boil, add the pasta and cook according to package directions until al dente.

    While the pasta cooks, slice your halloumi cheese into 1/2 inch thick pieces. Halve the cherry tomatoes and roughly chop your fresh basil.

    Heat a large skillet over medium high heat. Add the halloumi slices and cook for 3-4 minutes per side until beautifully golden brown and slightly crispy. Remove the halloumi from the skillet and set aside.

    In the same skillet, add the halved cherry tomatoes and pitted Kalamata olives. Cook for about 5-7 minutes, stirring occasionally, until the tomatoes have softened and just started to burst.

    Drain the cooked pasta, reserving about 1/2 cup of the pasta water. Add the drained pasta to the skillet with the tomatoes and olives. Toss everything together, adding a splash or two of the reserved pasta water if the sauce seems too dry.

    Stir in the chopped fresh basil and the cooked halloumi pieces. Give it a final gentle toss and serve immediately. Enjoy your delicious meal!
