First, get your scallops ready. Pat them very, very dry with a paper towel. This is super important for a good sear. Remove the small side muscle if you find any.

Next, let's prepare the asparagus. Snap off the tough ends of the asparagus spears. You can either leave them whole or cut them into bite sized pieces if you prefer.

Heat a large skillet, preferably cast iron, over medium high heat. Add one tablespoon of butter and let it melt. Once the butter is shimmering, add the asparagus and cook for about 5 to 7 minutes, stirring occasionally, until it is tender crisp. Remove the asparagus from the pan and set it aside.

Add the remaining tablespoon of butter to the same hot skillet. Once it is melted and slightly browned, carefully place the dry scallops in a single layer, making sure not to overcrowd the pan. Cook for 1 to 2 minutes per side, until they have a beautiful golden crust and are opaque throughout. If your pan is too crowded, cook the scallops in batches.

Just before serving, return the asparagus to the pan with the scallops. Add the minced garlic and cook for about 30 seconds until fragrant. Squeeze the juice from half of your lemon over everything. Give it a gentle toss and serve immediately, perhaps with a lemon slice for garnish. Enjoy your delicious meal!
