5Lemony Dill Yogurt Chicken Skillet
This quick and flavorful skillet dish brings together tender chicken, tangy lemon, and creamy Greek yogurt for a satisfying meal.
How to make it
- 1
Pat your chicken breast dry and slice it into bite sized pieces. You want them pretty even so they cook through at the same time.
- 2
In a medium bowl, whisk together the Greek yogurt, the juice from half of your lemon, and half of the chopped fresh dill. Season this creamy mixture with a pinch of salt and pepper. Add the chicken pieces and toss gently to coat them completely.
- 3
Heat a large skillet over medium high heat. Once it is nice and hot, add the chicken in a single layer. Let it cook for about 3 to 4 minutes without moving it, until it is beautifully golden brown on one side. Then, give it a flip and cook for another 3 to 4 minutes, until it is cooked through and lightly browned on all sides.
- 4
Reduce the heat to low. Stir in the baby spinach, the remaining chopped dill, and the zest from the whole lemon. Cook for just a couple of minutes, stirring gently, until the spinach has wilted down nicely.
- 5
Serve your delicious Lemony Dill Yogurt Chicken Skillet right away. You can squeeze the remaining lemon half over the top if you like an extra zing. Enjoy your wonderful meal.
