Pat your salmon fillets dry with a paper towel. Season them well with salt and pepper on both sides.

Heat a large skillet over medium-high heat. You can add a little olive oil if you like, or skip it if using a good non-stick pan. Once hot, place the salmon fillets skin side down if they have skin. Sear for about 4 to 5 minutes until the skin is crispy and golden.

Flip the salmon fillets and reduce the heat to medium. Cook for another 3 to 5 minutes, depending on your desired doneness. While the salmon cooks, you can steam or quickly saute your green beans in a separate pan or in the microwave until tender crisp.
