High-Protein Chicken & Spinach Fritters

How to make it

    First, grab a large mixing bowl. Add your ground chicken, cottage cheese, and egg to the bowl.

    Next, chop your fresh spinach finely. It doesn't have to be perfect, just small enough to mix in easily. Add the chopped spinach to the bowl with the other ingredients.

    Sprinkle in the oat flour. Now it's time to get your hands a little messy. Mix everything together really well until all the ingredients are combined. Don't be shy, a good mix makes for good fritters.

    Heat a large non-stick skillet over medium heat. Lightly grease it with a little cooking spray or a tiny bit of olive oil. Form the mixture into about 8 equally sized patties. They should be roughly the size of your palm.
