This easy and flavorful one pan meal is perfect for a quick weeknight dinner.
How to make it

Warm a large skillet over medium heat. You can add a splash of olive oil if you like, or a little water for oil-free cooking.

Add the sliced cremini mushrooms to the skillet. Cook them for about 5 to 7 minutes, stirring occasionally, until they release their liquid and start to brown nicely.

Stir in the drained and rinsed chickpeas along with the garlic powder. Continue cooking for another 3 to 5 minutes, allowing all the wonderful flavors to meld together.

Add the fresh spinach to the skillet. You might need to do this in batches if your skillet is very full. Stir gently until the spinach wilts down, which usually takes just a couple of minutes.

Finally, stir in the nutritional yeast until everything is well coated and smells wonderfully cheesy. Season with salt and pepper to your taste and serve this delightful dish immediately.
