How to make it

Grab a medium sized nonstick skillet and place it over medium heat. A little spray of cooking oil helps here, though it is not counted in our ingredients.

Add the fresh spinach to the warm skillet. Let it wilt down for about 2-3 minutes, stirring occasionally. Once it is nice and soft, push it to one side of the pan.

In a small bowl, gently whisk the eggs until the yolks and whites are just combined. You do not need to overbeat them.

Pour the whisked eggs into the empty side of the skillet. As the eggs begin to set, gently scramble them with your spatula for 2-3 minutes until they are almost cooked through but still a little soft.

Now, add the halved cherry tomatoes and the low-fat cottage cheese to the pan, distributing them evenly with the spinach and eggs. Sprinkle the everything bagel seasoning generously over everything.

Stir gently to combine all the ingredients. Continue cooking for another 1-2 minutes, just until the cottage cheese is warmed through and the tomatoes are slightly softened. Serve immediately and enjoy your delicious protein boost!
