Pat the chicken thighs dry and season them generously with salt and pepper. This helps create a lovely sear.

Heat a large skillet over medium high heat. Add a tablespoon of olive oil if you like. Sear the chicken thighs for 5-7 minutes per side until golden brown and cooked through. Remove chicken from skillet and set aside on a plate.

In the same skillet, add the minced garlic and cook for about 30 seconds until it smells wonderful. Pour in the heavy cream, stirring to combine any browned bits from the pan. Bring this to a gentle simmer.

Add the fresh spinach to the skillet, stirring until it wilts down into the creamy sauce. This usually happens quite quickly.
