This bright and simple cod dish comes together quickly, offering a delightful zest with every flakey bite.
How to make it

Pat your cod fillets dry with a paper towel. Season them generously with salt and pepper on both sides.

Heat the olive oil in a large non-stick skillet over medium high heat. Once shimmering, carefully place the cod fillets in the pan.

Sear the cod for about 3 to 4 minutes per side, until golden brown and cooked through. The fish should flake easily with a fork. Remove the cod from the skillet and set aside on a plate.

In the same skillet, reduce the heat to low. Add the chopped fresh parsley, the juice from one lemon, and the drained capers. Stir gently for about 30 seconds, letting the flavors meld.

Spoon the lemon caper sauce over the seared cod fillets. Garnish with a fresh lemon wedge from the second lemon and serve immediately.
