How to make it

  1. 1

Cut the chicken thighs into bite-sized pieces. Season them generously with salt and pepper.

  2. 2

Heat a large skillet over medium-high heat. Add the seasoned chicken and cook for 5 to 7 minutes, or until it is nicely browned and cooked through. Remove the chicken from the skillet and set it aside.

  3. 3

Add the diced red bell pepper to the same skillet. Cook for about 3 to 5 minutes, until it starts to soften slightly.

  4. 4

Stir in the cream cheese. Let it melt completely and mix with any pan drippings to create a wonderfully creamy sauce.

  5. 5

Add the fresh baby spinach to the skillet. Stir continuously until the spinach wilts into the sauce.

  6. 6

Return the cooked chicken pieces to the skillet. Stir everything together gently to coat the chicken and bell peppers in the creamy sauce.

  7. 7

Sprinkle the shredded cheddar cheese evenly over the top of the skillet. Cover the skillet with a lid and cook for 2 to 3 minutes, or until the cheese is melted and bubbling. Serve immediately and enjoy your delicious low-carb meal!
